Ingredients


2 hoagie rolls
(About 2.8 oz. each and 7 inches long.)

olive oil spray

1 cup onion, chopped

1 bell pepper, chopped

1/4 tsp. No Salt Sodium-Free Alternative

1/4 tsp. black pepper, ground

1 package (8 oz.) Mindful Chik'N Strips from Sweet Earth
(This is a plant based chicken alternative.)
Italian "Chicken" Hoagie

1 tsp. Italian seasoning

12 Tbsp. pasta sauce, divided
(We used Classico Four Cheese Pasta Sauce.)

3 slices provolone cheese, cut into quarters


We started with the ingredients for chicken cheesesteaks. Then we switched out the chicken with a plant-based alternative and added pasta sauce to make these delicious Italian "Chicken" Hoagies.

You can cut a lot of sodium out of this recipe if you use a lower sodium hoagie roll and lower sodium veggie provolone cheese alternative. The two hoagie rolls we used had 482 mg. of sodium EACH and the three slices of provolone had 200 mg. of sodium EACH.

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Slice two hoagie rolls in half and put them on a baking pan. Once the oven is hot, put them in for five minutes. When the timer goes off, flip them over and bake for another 5 minutes until they're lightly browned. Remove from the oven and set aside.

  3. While the rolls are toasting, heat a large non-stick pan over medium heat. Lightly coat with olive oil spray. Add onion and bell peppers and season with No Salt and pepper. Cook, occasionally stirring until the vegetables start to soften, about 5 minutes.

  4. Mix the thawed Chick'N strips into the vegetables and stir in the Italian seasoning. Cook, occasionally stirring, until the Chick'N is lightly browned and the vegetables have softened, about 5 minutes.

  5. Spread two tablespoons of pasta sauce on each half of the hoagie rolls.

  6. Divide the Chick'N and vegetable mixture between the four hoagie rolls.

  7. Put one additional tablespoon of pasta sauce over the Chik'N and vegetables.

  8. Cut each slice of provolone cheese into four parts and place three parts of cheese on each hoagie.

  9. Increase the heat of the oven to broil. Once it's hot, put the hoagie rolls in and broil them until the cheese melts and starts to turn brown, about 45 seconds to a minute.

  10. Remove from the oven and enjoy.

Yield: 2 Servings, 2 Sandwich Halves Per Serving
