Ingredients
1 8-inch wrap (We used BFree Sweet Potato Wraps.)
2 Tbsp. hummus
7 slices (About 2 oz.) of cucumber
2 thin slices of provolone cheese
(We used Sargento Ultra Thin Provolone.)
1 cup (1 oz.) baby spinach
2 ounces of roasted red peppers, sliced
1 Tbsp. balsamic vinegar glaze
(We used Filippo Berio Glaze with Balsamic Vinegar.)

This is an easy and delicious veggie sandwich from Leigh Pujado. We used a gluten-free wrap, but it's also good with other types of wrap as well.
1. Warm the wrap for 10-15 seconds in a microwave, hot oven, or on a hot grill.
2. Spread the hummus over the wrap.
3. Place the cucumber slices on the hummus.
4. Add the cheese.
5. Add the spinach.
6. Add the roasted red peppers.
7. Lightly drizzle the balsamic vinegar glaze over top.
8. Roll into a wrap and enjoy.
