Switchel drinks were all the rage for more than 400 years. They have a vinegar base which gives them an unusually sweet/tangy flavor. This is a really great way to get some extra protein and a delicious serving of antioxidant filled fruit. I like to make it in advance and enjoy a glass after being outside or a workout.
1. Put all the ingredients in a blender and mix on high (about 1 minute) until it's thoroughly combined and creamy.
2. Split it into two servings.
3. There are a couple of ways to drink it. Freshly mixed, it's exceptionally frothy, and the vinegar taste jumps out. You can also store it in the refrigerator for a couple of hours and let the bubbles dissipate. That way the vinegar is less pronounced, and it's more like a thirst-quenching blueberry drink. It'll stay good in the refrigerator for two days.
