Ingredients


Pumpkin Spice MIX (5 Cups Total)

2 1/2 cups water

1 1/2 cups Truvia Sweet Complete Brown Sugar

1 1/2 cups Splenda

1 can (15 oz.) 100% Pure Pumpkin

2 Tbsp. pumpkin spice


Pumpkin Spice Iced Latte

2 cups of ice

1 cup fat-free milk

2 cups coffee

1 scoop (1/3 cup) vanilla protein powder

1 cup PUMPKIN SPICE MIX (First recipe on this page.)

OPTIONAL

Whipped Cream

Cinnamon, ground

As pumpkin spice season arrived, we were looking for a recipe that didn't overwhelm us with sugar. After trying several versions, we came up with this delicious option.

The first section describes how to make the MIX. You can store that in the refrigerator and reheat it in the microwave when you want to use it. Mix it in coffee and milk, or a latte, and you get sweet pumpkin spice that's virtually sugar-free.

The second section is about how to make a pumpkin spice latte protein shake. If you drink it right away, it's incredibly foamy and makes 8 cups (4 cups per serving.) I like to leave it overnight, reducing it to 4 cups (2 cups per serving) without the foam.

Pumpkin Spice MIX

1. Put the water in a medium-sized pot and turn the heat on high.

2. Mix in the brown sugar and Splenda.

3. Once combined, stir in the can of pumpkin and pumpkin spice.

4. Bring to a foamy boil. Once it's boiling, reduce to medium heat and continue cooking for another 5-10 minutes, until it gets a glisten across the top and starts to thicken up.

5. To make a coffee drink, add 1/4 cup of MIX (or more) to taste.

6. Store in a microwave-safe container in the refrigerator. Cover and heat it in the microwave for 60 seconds and mix before using it in a recipe.

Yield: 20 Servings of 1/4 cup each

Pumpkin Spice Ice Latte

1. Put 2 cups of ice into a blender.

2. Add the milk, coffee, protein powder and 1 cup of the Pumpkin Spice Mix from the recipe above.

3. Blend until thoroughly combined, about 1 minute.

4. If you want to drink it right away, it's VERY foamy. One serving is 4 cups, so pour it into a VERY large glass. You get two servings.

5. If you want to drink it later, put it in the refrigerator and leave it for 4 hours or more. The bubbles will pop, reducing to 2 servings of 2 cups each.

6. Make it extra special by adding a little whipped cream on top and sprinkling it with some cinnamon.

7. If it's made with fresh milk, it will keep it in the refrigerator for at least four days.

Yield: 2 Servings (4 Cups Per Serving if Foamy and 2 Cups Per Serving if NOT Foamy)
