Ingredients


1 large head of cauliflower (approximately 1 3/4 pounds), trimmed and cut into 1 1/2 inch florets

1 tsp. olive oil (preferably from olive oil spray)

1/2 tsp. black pepper, freshly ground

1/4 tsp. salt

2 Tbsp. fresh sage leaves, finely chopped

2 tsp. lemon rind, grated


1. Pre-heat oven to 500 degrees Fahrenheit. Cut up 1 head (about 1 3/4 pound) cauliflower, trim the leaves off and cut into 1 1/2 inch sized florets.

2. Put the cauliflower into a large bowl and lightly coat with olive oil. (You can use olive oil spray from the supermarket or put fresh olive oil into a "mister" and spray it directly on.) This will use up about a teaspoon of olive oil.

3. Sprinkle cauliflower with black pepper and salt, then lay it all out on a single sheet. Bake until browned and tender, about 10-12 minutes.

4. Transfer cauliflower to a bowl, pour on the diced sage and lemon rind then toss well. Serve and eat right away.
