Ingredients


1 cup of water

3 heads of cauliflower, 6' diameter each (about 10 cups), chopped

3 cups yellow onion, chopped

9 cloves (3 Tbsp.) garlic, minced

3 Tbsp. 1/3 less fat cream cheese

1 Tbsp. light, whipped butter
(We used Land O Lakes Whippd Light Butter.)

1/2 cup fat free half and half cream

1/2 tsp. salt

1/2 tsp. black pepper, ground

1.5 packets (4g. per packet) Herb ox Sodium Free Chicken Bouillon

6 Tbsp. green onion (scallions), chopped


1. Put 1 cup of water in a large non-stick pot and heat to a boil. Add cauliflower, onions and garlic to the pot. Boil for 10 minutes, stirring occasionally until cauliflower is soft.

2. Pour in the remaining ingredients and blend with a hand blender. If you don't have a hand blender, mix the ingredients in the pot; then put them into a blender or food processor and mix until small chunks remain. It'll look like mashed potatoes with bigger lumps.

3. Divide into 6 one-cup servings and top each with a tablespoon of chopped green onions.

Yield: 6 Servings
