Ingredients


buttery cooking spray

2 large (8 oz. each) sweet potatoes, peeled and chopped

1 medium (8 oz.) apple peeled, cored and chopped
(We used pink lady.)

1 tsp. ground cinnamon

2 Tbsp. Splenda

1/4 tsp. salt

1/4 tsp. black pepper

Spray Butter


You can double this recipe in the same baking dish and serve it at a holiday dinner.

1. Preheat oven to 350 degrees Fahrenheit. Lightly spray a 13x9 casserole dish with cooking spray.

2. Peel and chop the sweet potatoes and apple. Put them in a mixing bowl and set aside.

3. In a small bowl, stir together the cinnamon, Splenda, salt and black pepper. Then sprinkle over top the sweet potatoes and apple. Cover the bowl and toss, until everything is thoroughly covered.

4. Pour the sweet potatoes and apples into the casserole dish, lightly coat the tops with spray butter, cover the dish with aluminum foil and bake for 60 minutes.

Yield: 4 Servings

You can freeze individual portions for easy re-heating later.

Microwave for approximately 1.5 - 2 minutes. Keep the container open a little to allow steam to escape.
