Ingredients


1 Tbsp. light butter
(We used Smart Balance Butter & Canola Oil Blend.)

1 pound medium Brussels sprouts, trimmed and halved

2 large shallots, thinly sliced

1/4 tsp. kosher salt

1/4 tsp. black pepper, ground

6 Tbsp. unsalted chicken stock, divided

2 1/2 tsp. Dijon mustard

1 tsp. honey

1 1/2 tsp. fresh thyme, chopped


The chicken stock keeps the Brussels sprouts tender while the honey mellows the flavor. This is the way Brussels sprouts were meant to taste. You can substitute sugar free honey and triple the amount if you want a bigger flavor burst without any extra sugar.

1. Heat a non stick pan over medium high heat. Add the butter and melt. Then pour in the Brussels sprouts, turning the cut side down and cook for 2 minutes without stirring.

2. Add the shallots to the pan and toss or stir to combine. Cook for 2 more minutes.

3. Sprinkle salt and pepper over top. Add 4 tablespoons of chicken stock. Stir, then partially cover and cook for 3 more minutes, or until the Brussels sprouts are crisp-tender.

4. Combine the remaining 2 tablespoons of chicken stock, mustard and honey in a bowl. Stir it into the Brussels sprouts. Sprinkle thyme over the top and cook for 1 more minute, stirring well.
