Ingredients
10 mashing potatoes (5.3 oz. each), washed, skin on, cut into 1/6’s
1 large sweet potato (16 oz.), washed, skin on, cut into 1/6's
1/3 cup plant-based butter (Plant based is not the same as organic.)
1/3 cup unsweetened plant-based milk (soy, oat or almond)
(We used Oatly! Oat Milk Low Fat.)
1 tsp. black pepper, ground
1/2 tsp. salt
This tastes best when combined with this recipe for Mushroom Gravy.

1. Fill a large pot with the chopped mashing potatoes and sweet potatoes. Add water until the potatoes are covered, then bring to a boil on medium-high heat.
2. After boiling for 5 minutes, check the potatoes. If they easily break apart with a fork they're done.
3. Take the potatoes from the heat, pour them into a strainer, them put the potatoes back into the original pot.
4. Add the plant-based butter, milk, pepper and salt to the pot. (If the butter is hard, melt it first.) Whip or mash with a potato masher until the potatoes are smooth with no lumps. Serve immediately.
Yield: 10 Servings (1 Cup Per Serving)
You can freeze individual portions for easy re-heating later.
Microwave on high for approximately 2 minutes. Keep the container open a little to allow steam to escape.
