Ingredients


2 medium zucchini (About 6.9 ounces each.)

1 cup panko bread crumbs

1 1/2 tsp. cajun salt

1 tsp. garlic powder

1 tsp. dried oregano

1/2 cup plus 2 Tbsp. Parmesan cheese, grated and divided

2 tsp. dried basil, divided

4 large egg whites

buttery cooking spray

1 cup of marinara sauce, warmed
(We used a cup of Classico Traditional Sweet Basil Pasta Sauce.)


This zucchini fries recipe is a delicious and healthier alternative to traditional fries, using zucchini as the base.

1. Cut each zucchini in half lengthwise and then in half crosswise. Then, cut each piece lengthwise into 1/4-inch slices. The more even you make the slices, the more evenly they'll cook.

Prepare all the ingredients.

2. Mix together the next four ingredients, panko, cajun salt, garlic powder, and oregano, in a shallow bowl.

3. Then mix in JUST 1 CUP of the Parmesan, saving 2 tablespoons for later.

4. Finally, mix in just 1 teaspoon of the dried basil, saving the remaining teaspoon for later.

5. Preheat the air fryer to 375 degrees Fahrenheit.

6. Whisk together the egg whites AND the remaining teaspoon of dried basil.

7. Dip the zucchini slices in the egg mixture and then in the crumb mixture, patting to help the coating stick.

8. Lightly coat the air fryer basket. Then, place the zucchini slices in a single layer in the basket. (We found putting the "skin" side of the zucchini slices down was easier. The breading was more likely to bake into the zucchini and not fall off.)

9. Cook until lightly browned, 6-8 minutes. Then flip each piece and continue cooking until golden brown, another 3-5 minutes longer.

10. Sprinkle the fries with the remaining 2 tablespoons of Parmesan cheese and serve with the sauce you've warmed.
