Ingredients


buttery cooking spray

2 large whole eggs

1/2 cup low-fat Parmesan cheese, grated

1/2 cup toasted wheat germ

1 tsp. Italian seasoning

3/4 tsp. garlic salt

1 medium eggplant (About 1 1/4 pounds.)

1 cup of marinara sauce, warmed
(We used a cup of Classico Traditional Sweet Basil Pasta Sauce.)


Transform your snack time with this mouth-watering and easy-to-make Eggplant Fry recipe. Crispy, cheesy, and perfect for dipping.

1. Lightly coat the air fryer basket with buttery cooking spray.

2. In a shallow bowl, whisk the eggs together.

3. Mix the Parmesan, wheat germ, and Italian seasoning together in a separate bowl.

4. Trim the ends of the eggplant, then cut the eggplant lengthwise into 1/2-inch thick slices. Cut the slices lengthwise into 1/2-inch strips. Keep the fries as even as possible so they cook more uniformly.

5. Preheat the air fryer to 375 degrees Fahrenheit.

6. Dip the eggplant strips into the eggs, then roll those strips in the cheese mixture.

7. Place the coated eggplant strips into the air fryer basket in a single layer. Try to lay each one flat on the skin side. Leave a little space between the fries for the air to circulate.

8. Lighty spray the buttery cooking spray over the fries.

Bake for approximately 7-8 minutes.

9. Bake for approximately 7-8 minutes, then flip and bake for an additional 2-3 minutes until golden brown.
