Ingredients
1 Tbsp. brown sugar
1/8 tsp. salt
3/4 tsp. black pepper, ground
1 tsp. ground sage
3/4 tsp. thyme
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. ginger, ground
1 1/4 tsp. red pepper flakes (OPTIONAL)
2 pounds 93% lean ground turkey
The original version of this recipe is from Leigh Pujado. Our tasting panel liked it, then added a few extra spices to punch things up even more. Experiment with the flavors you want for the perfect breakfast sausage.
This recipe is higher in fat than we usually feature, but you can balance it out with the rest of the meal.
1. Start by whisking all the spices together in a large bowl. The only ingredient you're not stirring in is the ground turkey.
2. Add the ground turkey and mix until all the ingredients are evenly distributed throughout the meat.
3. Form the meat into patties. Each patty is about 1/4 cup (2 oz. if you have a scale.) This should make 16 patties.
4. Heat a skillet to medium-high. When it's hot, spray it lightly with olive oil.
5. Cook the patties until they are browned on both sides and no longer pink in the middle, about 2-3 minutes per side. (It will take longer if you make larger patties.)
6. Once they're browned, transfer to a plate for serving.
7. You can store them in an airtight container for 3 days in the refrigerator or the freezer for up to 3 months. Heat on high in the microwave for 55 seconds if stored in the refrigerator or 90 seconds on one side and 45 seconds on the other side if reheating from the freezer.
