Ingredients
buttery cooking spray
2 cups old-fashioned oats
(We used Bob's Red Mill Old Fashioned Rolled Oats.)
3 cups crisp brown rice cereal
(We used One Degree Organic Foods Sprouted Brown Rice Crisps.)
4 large egg whites
1/2 cup sugar free honey
(We used Honey Tree Sugar Free Imitation Honey.)
Mix-Ins
4 Tbsp. dark chocolate mini chips
1/2 cup Ocean Spray Craisins Dried Cranberries
This tasty granola is a nice crunchy treat when you're out and about. You can change the flavor by using different mix-ins.
1. Lightly coat the inside of a slow-cooker with buttery cooking spray. Then put aluminum foil on a large rimmed baking sheet and set aside.
2. Combine oats and rice cereal in a large mixing bowl.
3. Whisk together the egg whites and sugar free honey until fully combined. Then pour the honey/egg mixture over the oats and rice. Stir until the oats and rice are thoroughly coated.
4. Pour the mixture into the slow cooker and level it out. Put the lid on, but keep it open just a little (a centimeter or less is good). Cook the granola on high, for 2 to 3 hours, or until crunchy. Stir it gently every 45 minutes to keep the granola near the edges from burning. When stirring, try not to break up the granola too much, you want some smaller chunks/clusters.
5. Once the granola reaches the crunchy texture you like, pour it over the prepared baking sheet to cool.
6. Once cool, stir in the chocolate chips and craisins. (You can mix in other options if you'd like. We've listed the nutritional breakdown of just the granola mixture so you can add the nutritional value of whatever you stir in.)
