Ingredients
1 lb. 93% lean (or leaner) ground beef
1 medium onion (about 1 Cup), chopped
3 tsp. garlic cloves, minced
1 cup apple juice
1/4 cup packed brown sugar
(If you want to reduce the sugar by 13 grams per serving, replace the brown sugar with Splenda.)
1.5 tsp. orange peel spice
2 Tbsp. red wine vinegar
2 tsp. horseradish
1 Tbsp. yellow mustard
4 cups cabbage (10 oz.), shredded
1 can (14.5 oz.) no salt added tomatoes, diced
1. Heat a large non-stick pan over medium heat. Add the ground beef, onion, garlic and cook until browned, about 10 minutes. Drain any excess grease off.
2. Add the remaining ingredients, mix them all together and bring to a boil. Once boiling, reduce heat to medium low, cover and let simmer for about 10 minutes, stirring occasionally.
3. Serve in a soup bowl and enjoy.
Yield: 4 Servings
You can freeze individual portions for easy re-heating later.
Make sure to freeze them in freezer safe tupperware containers.
When you heat them up, microwave for approximately 4 minutes, stir and finish heating it for another 3 minutes. Keep the container open just a little to allow steam to escape.
