Ingredients


5 1/2 cups eggplant, peeled and chopped

5 cups zucchini (Approx. 4 Medium Zucchini) peeled and chopped

1 red or green bell pepper, seeded, chopped

1 cup onion, chopped

3 cups tomatoes, chopped

2 cans (14 oz. each) garbanzo beans, drained and rinsed

1 Tbsp. oregano

1/2 tsp. black pepper, ground

1 can (14 oz.) artichoke hearts packed in water, drained and quartered

1 package (8 oz.) egg noodles, cooked

Optional

1/4 tsp. red pepper flakes, crushed


1. Put all the ingredients in a 4-5 quart crock pot and stir. Cook on low for 8 hours or high for 4-5 hours.

2. Cook the noodles according to the package instructions and serve the stew over top. If you want it a little more spicey, mix the red pepper flakes in.
