Ingredients


1 large onion (5.3 oz.) cut into slices

2 lbs. pork tenderloin, trimmed of fat and cut into 1.5 inch cubes
(Avoid pre-packaged tenderloin because it often has high levels of salt/sodium added.)

1 cup baby carrots

1 cup dry red wine

1/2 cup water

4 cloves (4 tsp.) garlic, minced

1 Tbsp. ketchup

2 Tbsp. balsamic vinegar

2 Tbsp. low sodium soy sauce

2 Tbsp. sugar free imitation honey
(We used Honey Tree's Sugar Free Honey.)

1/2 tsp thyme

2 Tbsp. Flat leaf parsley, chopped

1/4 tsp. fresh black pepper (or to taste)


1. Line 4-5 quart slow cooker with onion slices. Lay tenderloin cubes on top and arrange baby carrots around it.

2. Mix together remaining ingredients and pour over tenderloin.

3. Cover and cook on LOW 7-8 hours or on HIGH 3-4 hours.

4. Serve with steamed greens such as broccoli and a high fiber slice of bread.

You can freeze individual portions for easy re-heating later.

Make sure to freeze them in individual freezer friendly bags or freezer safe tupperware containers.

When you heat them up, microwave for approximately 5 minutes, keeping the bag or container open just a little to allow steam to escape.
