1 large canteloupe (about 4 lbs. before cutting), cut into chunks
2 scallions (green onion), chopped
1/4 cup sugar free honey
(We used Honey Tree's Sugar Free Imitation Honey.)
1/2 cup orange juice
1. Cut the melon in half, scoop out the seeds and remove the rind. Then cut the flesh into large chunks.
2. Chop the scallions and put half of everything (cantaloupe, scallions, honey and orange juice) into a blender or food processor. Pulse or blend until smooth and pour it into a large bowl. Then process the remaining half and mix it into the large bowl.
3. Cover the bowl and chill for 2-3 hours.
4. Whisk soup together and serve, about 1 cup each.
