Ingredients
1 bag (12 oz.) dried brown lentils
1 large sweet onion (2 cups), chopped
3 large carrots (2 cups), peeled and chopped
3 stalks celery (1 cup), chopped
2 cloves garlic (2 tsp.), minced
6 cups low sodium chicken broth
(We used Progresso Unsalted Chicken Broth.)
1 tsp. cayenne pepper
1 package (1 lb.) chicken sausage, casings removed
(We used Publix Greenwise Hot Italian Chicken Sausage.)
1 sprig fresh thyme
1 bay leaf
This recipe is higher in sodium. If you're on a low sodium diet, you might consider another option.

1. Stir the first seven ingredients (lentils thru cayenne pepper) together into a slow cooker. Take the chicken sausage, break it up and stir it into the pot.
2. Place the thyme and bay leaf on top, cover and cook on HIGH for 3 hours or LOW for 6 hours.
Yield: 8 Servings - About 1.25 Cups Each
You can freeze individual portions for easy re-heating later.
Microwave the soup for approximately 2 to 3 minutes, keeping the container open a little to allow steam to escape.
