Ingredients
12-16 ounces of ground beef alternative
(We used 12 ounces of Impossible Burger Made From Plants.)
10 cups water
CHOOSE 1
1/3 cup beef bouillon OR
1/3 cup sodium free beef flavor bouillon
(We used Herb-Ox Sodium Free Beef Instant Broth & Seasoning, dry mix.)
1/2 cup dried onion
1/2 cup green split peas
1/2 cup barley
1/2 cup yellow split peas
1/2 cup alphabet macaroni
1/2 cup lentils
3/4 cup tri-colored pasta
salt and pepper to taste
We got a jar of this for Christmas and loved the hearty taste. Packed with fiber, it's also incredibly filling.
If you use regular bouillon, this recipe is very high in sodium. If you're on a low-sodium diet, you should only use sodium-free bouillon.
Love Soup
1. Heat a non-stick frying pan over medium heat. Brown the beef alternative according to package directions (6-8 minutes for Impossible Burger). When done, set aside.
2. While the beef alternative is cooking, bring 10 cups of water to a boil in a large pot.
3. Pour all the ingredients, including the browned beef alternative, into the pot of boiling water. Cover and simmer for 45-60 minutes, or until lentils and split peas are soft.
4. Divide into 6 servings and enjoy.
Yield: 8 Servings, About 1.5 Cups Per Serving
You can freeze individual portions for easy re-heating later.
Microwave for approximately 3-4 minutes. Keep the container open a little to allow steam to escape.
