Ingredients


olive oil spray

4 oz. boneless, skinless chicken breast, chopped

1 (8-inch) whole wheat tortilla

1 Tbsp. peanut butter

2 Tbsp. hummus

1 cup endive lettuce, shredded

1/3 cup tomatoes, chopped

3 Tbsp. red onion, chopped

1/3 cup bell pepper, chopped

1/3 cup cucumber, peeled and diced

1/3 tsp. balsamic vinegar


This recipe idea came from a sandwich served at a restaurant called "Peanut Butter 'n What?" that used to be on Duval street in Key West, Florida. It was such a tasty combination we had to make a healthy version.

1. Heat a non-stick pan over medium high heat. Once it's hot, lightly spray with olive oil. Cook the chicken until the pieces are browned and no longer pink in the middle. Remove from heat and set aside.

2. Lightly toast the tortilla over a burner on low, a few seconds on each side. Spread the peanut butter on top then the hummus on top of the peanut butter. Sprinkle the chicken across the hummus. Cover with the remaining 5 items (lettuce through cucumber) and drizzle the vinegar over the top.

3. Fold the sides into the middle, then wrap the sandwich up. Cut in half and enjoy. (For less calories, put half in a plastic bag in the refrigerator and save for the next day.)
